Back to the board. The difference is rather subtle but basically, bon soir is a greeting, bon soirée is a farewell, meaning, 'have a nice evening'. Example: Pierre meets Céline at the entrance to the cafe. "Bon soir" "Bon soir" As Celine leaves she says, "Au revoir, bon soirée". Pierre, " Toi aussi, bon soirée".
Bye, have a nice evening, you too.
