Just another day in paradise Patrick, as the great man once sang. "Call some place paradise . . . kiss it goodbye." -- The Eagles Season's Greetings to one and all. My son did all the catering. I did f'all except buy the food and load the dishwasher (twice). And very tasty it was too. I recommend goose-fat for roast potatoes. Lidl sells it. Morrison's Xmas pud, fortified with rum, also very good.

I bought goose fat for roasting the potatoes and other veg this christmas but, frankly, I wasn't that impressed.
Give me good old beef dripping any day ;D It adds that indefinable thing: flavour.

Worked for us. Seems to make them crustier. But we also had the fatty juices that ran out of the leg of lamb, which can't have hurt.

We had goose yesterday - and frankly it was a disappointment.
It was the finest organic free-range goose and the person who cooked it is a very good cook. But it was, quite frankly, tough.
What went wrong?
(I didn't like to ask.)

Having talked it over with my daughter, who used goose fat yesterday and didn't get crisp roast potatoes, we came to the conclusion that we were cooking far too many in the roasting tin (I catered for 8 people, she for about 12 I believe). So maybe it wasn't the goose fat's fault after all. However, I don't think I'd bother again. I like the taste of potatoes roasted in beef dripping and goose fat doesn't seem to have much flavour.

Morrison's Xmas pud, fortified with rum, also very good. I was on washing-up duty too. It's a better plan than getting up at 5am to start loading a naked turkey into the oven. All this talk of what type of animal you lot like to sacrifice for the sake of a crispy potato is making me feel guilty about my family who had to have them cooked in vegetable fat so I can eat them too. They tasted perfectly delicious.

Dallas has nothing on the comings and goings at Stub Crouch! ;D Patrick- - Praise be to Trubble - I was beginning to think no one would notice! Oh! I only recently learnt how to do Roasties - and it was specifically Olive oil I was told to do them in - by Best Beloved's Mum! Mind you - when it comes down to it - they're just sautéd potatoes done in the oven.

We eschew political debate in favour of the correct way to roast potatoes. Does anyone remember the 'trifle with or without jelly' row back in the summer? My god, things got heated there.

It is a mystery to me though, that Olives tast foul. Olive Oil isn't that brilliant - yet whatever you cook in it - i.e: Fry, roast etc. Tastes so much better than when done with other oils.
There's a chippy in town that up until recently must have done it's chips in beef oil/fat/dripping/ whatever - Bloody fantastic they were too!
