A couple of weeks ago Mrs E sent me a recipe for fried chicken, served with salad and pitta bread.
Tonight I cooked it for the first time. We sat around a table (re. another thread) and ate it.
Queen of The Troubled Teens insisted on putting a bit of ketchup on it, and she didn't eat her herb/5-bean salad, but she ate every bit of the chicken. Gothboy too.
I didn't follow her recipe exactly - I didn't have tumeric, and I was probably heavy-handed with herbs and onions - but it was nonetheless a resounding success.
It was a bit North African maybe? Anyway, here's Mrs Everso's secret recipe.
Chicken with Pitta Bread
I allow about one and a half chicken breasts per person. If you have any left over I imagine it would still be delicious in a sandwich.
For FOUR people
Pitta bread (I allow a couple per person) 6 breasts of chicken - cubed 6 cardamon pods crushed to release the seeds 1 heaped teaspoon each of: cumin coriander garam marsala ginger 1 level teaspoon each of: tumeric salt black pepper Juice of one lemon 3 cloves garlic - crushed Vegetable or sunflower oil and butter to fry one large onion roughly chopped
combine the spices, salt and pepper with the lemon juice and crushed garlic and marinade the chicken breasts.
Fry the onion in the butter and oil for a few minutes until soft. Add the chicken and fry until cooked.
Serve with pitta bread and a salad. [/i]

P.S. And I didn't put any salt in, because we don't cook with salt.

I used to do some mean wraps - very simple - just chicken, roasted and skinned red pepper, lettuce, bit of cucumber - a tiny weeny drizzle of olive oil with a sprig of rosemary in. (I think it was anyway).

Salt is a vital mineral, essential to a properly functioning human body (seriously).
It's probably bad for you if you go through 5lbs a day, but otherwise, it really is an essential for day to day existance.

Salt is a vital mineral, essential to a properly functioning human body (seriously). It's probably bad for you if you go through 5lbs a day, but otherwise, it really is an essential for day to day existance. AH Nah, I eat tons of stuff like baked beans, and meals in restaurants, and sandwiches out of Greggs and stuff like that. I get plenty of salt; so I just don't use it in cooking.

Riot, I'm so glad it was successful. We're having a little get-together on Saturday for my Uncle's 90th birthday and I'm doing this chicken recipe as one of the dishes. Of course, my uncle (who served in North Africa during WW2 and thus must have eaten god-only-knows what during that time) refuses point blank to have anything to do with foreign muck so I'll be making him a shepherd's pie.

FS, I don't even remember why I don't cook with salt. It's just ingrained now. That pun WAS intended, wasn't it? Bit like your "I was given a book on origami but I don't know what to make of it" - what happened to that thread BTW? It was great.

I use only a little salt in cooking and when OH had to go into hospital recently they said she didn't have enough sodium in her blood so they took her in ealy to put her on a drip overnight.
What I really can't stand is when people pour salt all over food you've cooked without tasting it first, as though whatever subtle flavour you'd conjured up was bound to need overwhelming.

I cooked this yesterday and I added a handful of chopped fresh coriander before serving. If you like the taste of coriander it really does finish the dish.
