For the Sweet-toothers! Many annoying recipes on the net for this give you too higher quantities in the ingredients. So, I 've had a word with Mum in Law and got it sorted, so if you're using (for instance) one of those bought pastry cases - or you have one of the shallow pastry dishes (with the wavy edges for instance - about 8-10" this'd probably do you: A small tin of evaporated milk (6 - 6 1/ 2 oz 12oz Light Muscovado Sugar Add together (of course!) Whisk it like billio until fluffy - a good 5 minutes...... pour into your pastry case...... .......and cook for ten to twenty minutes at 300F 150C Until the top is firm and bouncy. Leave to cool. The inside should have a nice, bubbly, moist texture. Enjoy.

I have to keep bumping that up so I know where it is for the next time I make it! I must start making my own pastry. (Haven't done for years) Don't know if you've noticed but "Saxby's" and "Jus-rol" are one and the same now - and Saxby's was always the better pastry. However I was in Sainsbury's and I see there's a new type of Jus-rol called "All Butter Pastry" which I can only assume is the made to the Saxby's recipe - because that was certainly more buttery.

I always make my own shortcrust pastry. It's easy if you use a food processor, although I always tip the crumble mixture out into a bowl and add the water gradually. I tried adding it once in the food processor and the pastry got too wet. I always buy puff pastry though. I remember trying to make it once when I first got married (showing off to my new husband, I suppose) and it turned out hard as nails.

Appleby becomes a no go zone for residents at Horse Fair time. You just skirt around the place until it's safe to return. I did witness one set of hi-jinks there at one visit - they seemed to be finding great amusement in riding their horse and carts straight into the river at high speed.

BTW, i have the most utterly best ever recipe for Key Lime pie (except it's made with just normal limes cos you can't get key limes in the UK much) which is pretty similar to this in terms of it uses condensed milk.
It is absolutely beautiful my recipe. It's actually Kirsty Allsop's recipe that she gave to some charity recipe book that someone bought me. But it really rocks.
