I invented a new recipe last night. It's a sauce for pasta, based on meatballs, but very easy to do and we thought it was delicious and dead easy.
1 onion olive oil 2 cloves garlic 1 red or yellow pepper (or half of each) 2 large teaspoons of Salca tomato pesto (available in most supermarkets) 2 tins of tomatoes 6 rashers of smoked bacon (trimmed of fat) a couple of mushrooms (if you like them) One pack of Somerfield (or similar) pork and chorizo sausages (6 in pack) Plain flour Pepper & salt Some white wine if you have any
Fry the chopped onion, peppers and garlic in oil in a saucepan until soft. Add bacon and continue frying for a couple of minutes. Whiz up the tomatoes until pureed and add them to the pan, together with the mushrooms and Salca tomato pesto. If you have any wine you can tip that in too. Empty the contents of the pan into a large casserole dish (not a metal one).
Skin the sausages and cut each one into 4 pieces. Roll each piece between your hands to form a small ball and roll in the seasoned flour. Fry the meatballs in olive oil until browned.
Tip the meatballs into the casserole dish with the tomato sauce and cover with lid.
Most people would cook this in the saucepan, having to stir every so often. I stick mine in the microwave and cook for about 30 minutes on full. This reduces the sauce as it would in the saucepan but in far less time and it tastes exactly the same, except you don't get the burned ring around the edge of the dish and you don't have to keep stirring.
Serve with spaghetti (or any other pasta)

....Some white wine if you have any.... Feeds 4 No everso, no! Cut out the tomatoes or pesto by all means if there are none in the cupboard. Don't bother to go to the butcher for bacon or sausages. But you must - go - and -buy - the - wine. Essential!

I bought some Sacla pesto a while back, having been unable to find my usual. It had gone mouldy in a few weeks! Back to the organic for me!
Your little experiment sounds a little like mine. Albeit a simpler version. I was trying once to recreate a stupidly simple garlic spaghetti combination a neighbour of mine once treated me too - Just spaggie cooked al-dente in garlic - it was slightly oily without being greasy and was delightful! I've no idea how he did it! What I did was cook my spaggie - then in a separate saucepan melt some butter and sprinkle some freshly chopped garlic in. A spoonful of pesto, a glug of white wine and some chopped (if big) mushrooms. cook til the mushrooms are done (not long) then just bung the spaggie on top and stir it together and serve.

Another one I do is chopped lean bacon, garlic, onion fried, add pot of creme fraiche and loads of parmesan cheese and liberal grinding of black pepper. Pile on to spaghetti. Really delicious (well, we think it is!)

After all this talk about pasta, for my lunch I had spaghetti with the remains of the tomato Salca, some rocket leaves and a good helping of parmesan. Mmmmm.
Oddly enough, after telling Patrick that my Salca is never around long enough to go mouldy, I had a peek at the Salca basil pesto and, sure enough, it had the beginnings of a little white overcoat.
Typical!

Oddly enough, after telling Patrick that my Salca is never around long enough to go mouldy, I had a peek at the Salca basil pesto and, sure enough, it had the beginnings of a little white overcoat. Typical! It doesn't take long! We had just alighted from the train in Manchester today and were perambulating along Deansgate when I said to Best Beloved "Isn't it a nice day!". Quite possibly one of the most stupid things you could say in Manc. When we emerged from the other side of the Arndale Centre half an hour later - it was distinctly soggy.

Here's another then - when you can't be bothered to cook;
Can of chopped tomatoes 2-3 or 4 rashers of bacon chopped up (Or Tuna does just as nicely) Sprinkling of mixed herbs or basil Couple of crushed cloves of garlic Salt, Pepper Pasta of your choice.
Cook Pasta - Cook all the rest in another pan (it's optional to fry the bacon a little first if you like) If you like your tomatoes pink and creamy - a dollop of crème fraiche goes well, It all takes about 10-15 minutes then drain the pasta and mix it in with the other on the hob for a while.
Serve.
Who needs microwaves eh?

I could see Mrs E in this latest Triumph............ I may have told you before, but Mr. E. used to have a lovely little Triumph Spitfire with an Ashley hardtop. Oh, it were fab. His one was white though.
