I'm on a healthy-eating/weight-loss thing for 2 weeks at present, having put on a few pounds since I started on the HRT and being not happy about it.
So I'm trying out all these new, low-calorie, healthful recipes. (I even ate some broccoli last night for the first time in my life; it doesn't really taste of anything, does it? Or had I over-cooked it?)
And last night I made my first risotto. It was a two-beans (kidney and haricot) one, and it was very filling.
Tomorrow I might try the recipe for breakfast risotto (fresh fruit.)
It was a success. I have always been told that risotto was a tricky one to get right, so I am proud of my culinary success!

Cous cous is the devil's food. I don't like risotto either. Both together - good grief. (I'm having fried potato and omelette today.)

We love risotto. You can chuck just about anything in. Mr. E. calls it savory rice pudding.
I did a small risotto the other night to go with some chicken. It just had onion, garlic and vegetable stock and lots of parmesan cheese added at the last minute.

The secret to a good risotto is like making love. Use the finest ingredients and simmer until tender. And then serve??

Or (my version) go and get a bag of chips instead.
(I really do not like the texture of the rice.)
