I usually finish a bottle of wine over the course of three or four nights and I find that if I keep it nicely cold (I'm talking about white wine here of course) it's just as good on the last night as on the first. I can't think you'd need a preservative for wine. Red wine always seems better the second night, but usually isn't so good on the fourth so I try to finish it earlier.

You can get a sort of stopper that pumps the air out of a partly-drunk bottle. bottle - that helps.
You might even be able to keep it for a bit longer...
