I made a Victoria sponge this morning... Mr Plum has eaten almost half of it already! Tip from my late Ma (a professional cook) - weigh the 3 eggs and use that weight for the rest of the ingredients rather than the usual 6oz or whatever. Perfect every time. Thanks for the tip. I shall try that next time!

Well, the chocolate torte was delicious. Very dense yet light and extremely chocolatey and rich. I served with raspberries and double cream
It's not probably the sort of thing you'd do very often as it's not cheap to make but for a special occasion, such as today, it was perfect.
Anyway, recipe as follows:
2 x 100g bars of good quality dark chocolate 200g butter 1 teaspoon vanilla essence 5 eggs, separated 150g caster sugar 100g ground almonds 50g cocoa powder, sifted icing sugar for dusting (but I didn't bother with this)
Grease a 25cm/10inch springform tin (I used a 9 inch deep tin which was fine but needed a little longer to cook)
Melt the chocolate and butter together in the microwave for a couple of minutes and stir in the vanilla essence.
Beat the egg yolks with 50g of the sugar until pale in colour and thick, then pour in the chocolate mixture.
Fold the ground almonds and cocoa into the chocolate mixture.
Beat the egg whites until stiff, then gradually add the remaining 100g of sugar until combined.
Fold one-third of the egg white into the chocolate then gently fold in the rest until just blended.
Spoon into the tin, spreading evenly, and bake for 30-35 minutes (I baked mine for about 40 minutes because it was in a 9 inch tin and therefore the mixture was deeper)
Let the cake stand for 10 minutes before turning out and dusting with icing sugar.
Serve with whipped mascarpone cheese sweetened with icing sugar (I served mine with raspberries and double cream. I thought the sweetened mascarpone would be too much with the cake. The unsweetened raspberries and cream just set it off nicely).
There's about a quarter of it left and Mr. E. has his eye on it but I'm hoping to save it for tomorrow.

I shall probably never make that...but will print off the recipe and take it to bed.... Bonbon, MAKE IT! Man, it's so good. Dead easy too. I had a feeling that, because it consisted of expensive ingredients, it would be a failure (that always seems to happen to me) but it was great. Save it for an occasion when you're needing to impress or if you're killing the fatted calf (like I will be when my son gets home in June from 2 years in Australia).
